Potato Rounds

Nice appetizer for company "cocktail hour"

2 large unpeeled baking potatoes

Spray vegetable oil

1 cup shredded Cheddar cheese

4 bacon slices, crisply cooked, drained and crumbled

1/3 cup green onion slices

1/2 cup sour cream

 

Preheat oven to 450 degrees.  Cut potatoes into 1/4-inch-thick slices.  Lightly spray both sides of potato slices with oil.  Place on cookie sheet and back 20 minutes or until lightly browned.  Meanwhile, combine cheese, bacon, green onion, and 1/4 cup sour cream.  Spoon 1 teaspoon mixture onto potato slices.  Bake 3-5 minutes or until cheese is melted.  Top each potato slice with a small amount of the remaining sour cream before serving.  Makes about 24 rounds.
