Breakfast Pizza

If you're at my house for breakfast, chances are you'll be served this pizza!

Crust:

7 frozen shredded hash brown patties, thawed and broken apart

2 eggs, beaten

Salt and pepper to taste

 

Preheat oven to 400 degrees.  Combine potatoes, eggs, salt and pepper; mix well.  Spread potato mixture into a 14 inch circle on a cookie sheet.  Bake 20 minutes.

 

Egg topping:

6 eggs

1/2 cup milk

Salt and pepper to taste

1 cup chopped ham

1/2 cup sliced mushrooms

1/4 cup diced onion

1/4 cup chopped green bell pepper

1 1/2 cups shredded cheddar cheese

 

Whisk eggs, milk, salt and pepper in a 1 quart microwaveable bowl.  Microwave on medium high for 2 minutes, stir.  Continue microwave/stirring process until eggs are cooked to a "scrambled eggs" consistency.  Spread egg mixture evenly over potato crust.  Top with ham, mushrooms, onion and bell pepper.  Sprinkle with cheese.  Bake 10 minutes.  Cut into wedges to serve.
